Lemon Garlic Chicken
6 skinless, boneless chicken breast halves (4 ounces each)
For the marinade: 2 tbs. fresh lemon juice
2 tbs. white wine or reduced-sodium organic chicken broth
2 tbs. olive oil, divided
1 clove garlic, minced
1 tsp. honey
1 tsp. dried oregano
1/8 tsp. black pepper
1/8 tsp. sea salt
Lemon slices for garnish

1. To prepare marinade, in a shallow glass dish, combine lemon juice,
wine, 1 tbs. of oil, garlic, honey, oregano, pepper, and salt. Mix well.
2. Add chicken to marinade, turning to coat. Cover dish with plastic
wrap and refrigerate for 30 minutes.
3. In a large skillet, heat remaining oil over medium-high heat until
hot but not smoking. Add chicken to skillet. Discard marinade.
Cook, turning once, until cooked through and no longer pink, about
20 minutes.
4. Place chicken on a serving plate. Garnish with lemon and oregano.
Serve immediately. Serves 6.
